Salmon Fishcakes

Good for using up leftover mashed potato.

Ingredients
250
mashed potato (dry mash is better than runny mash)
1/2
tin of salmon
25
spring onions, finely chopped
10
herbs (tarragon/dill/parsley)
oil
side salad
Directions
1.
Combine all of the ingredients in a bowl (except for the oil and side salad).
2.
Form into fish cakes. Coat in plain flour, shake off any excess and then place in the fridge for at least half an hour to firm up.
3.
Fry for about 3-4 minutes on each side until golden brown.
4.
Serve with the side salad and maybe a splash of salad cream, and enjoy!
