Beef & Spinach Cottage Pie

Ingredients
1
potato (sweet or normal)
Butter
Milk
Grated cheese, parmesan or tasty
Spring onion, diced
1
carrot, grated
1
brown onion
Garlic
500
gr beef mince
Tomato paste
Beef stock cubes
Baby spinach leaves
Directions
1.
Add potato to a saucepan and boil until easily pierced with a knife, 10-15 mins. Drain and return to saucepan. Add some butter, milk, and salt and mash until smooth. Stir through cheese to taste.
2.
Heat a pan over high heat. Add oil, onion, carrot and a pinch of salt. Push vegetables to the side, cook the mince and garlic until it breaks apart.
3.
Add the cooked veggies, spinach leaves, tomato paste to taste, half a cup of water and beef stock cube. Stir to combine and until spinach has wilted.
4.
Transfer the mixture to a small baking dish and spread mash over the top. Grill until lightly golden at 180*C.
