Brad's Leftover Turkey Ramen

Ingredients
2
packs of highest quality store-bought ramen noodles (fresh or dry)
1
qt broth (recipe below—you can also use store-bought in a pinch)
1
cup shredded leftover turkey meat
1
hard-boiled egg, halved
1
scallion, thinly sliced
Mushrooms, thinly sliced
1
baby bok choy, halved
Togarashi or furikake of choice
Sesame oil
Soy sauce
White miso
Smoked ham hock (optional)
Leftover turkey body
2
onions, halved
2
scallions, chopped
2
-inch chunk ginger
4
stalks celery
2
heads garlic head
3
large carrots, chopped
4
fresh bay leaves
2
sheets kombu
1/4
cup olive oil
Salt and pepper to taste
Directions
1.
Cook ramen to package instructions.

Meanwhile, mix the mushrooms and turkey with some sesame and olive oil in a hot skillet or broiler with a little salt.
3.
In a large stockpot, saute all vegetables in olive oil on medium heat until everything is golden brown (around 10 minutes).

Add the rest of the ingredients and cover with one gallon of water. Turn heat to high and bring the liquid to a simmer. Then, reduce to medium and allow to simmer for up to eight hours. You want the bones to all breakdown at the joints of the turkey.
5.
To plate, add noodles, then broth in a bowl. Top with the mushroom-turkey mixture, scallions, bok choy, egg, and seasoning.
