Mama’S Fish Stew

When I was in my late 40’s my doctor told me my cholesterol was a bit high. From that point on, every time I visited my Mother for lunch, she would make me a “healthy” lunch. One of my favorites was her Sicilian fish stew. She’d tell me many times, that as a child growing up in the sea coast town of Riposto, her Mother would walk down to the fish market in the morning to buy whatever fresh fish came off the boats. This is a dish my Grandmother made often.

Ingredients

tbsp olive oil
1
cup chopped onion

large garlic cloves, chopped

cup chopped fresh parsley
1
cup chopped tomato ( about 1 medium)
1 1/3
cups cold water
2/3
cup dry white wine (optional)
1/4
tsp red pepper flakes
2
lb mixed fish fillets (haddock, cod or snapper), cut into 2-inch pieces

loaf crusty bread
Directions
1.
Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and sauté 4 minutes. Add parsley and stir 2 minutes. Add tomato and cook 2 minutes longer. Add 1 1/3 cups cold water and dry white wine and simmer until fish is cooked through, about 10 minutes. Season stew to taste with salt and pepper. Ladle into bowls and serve.
