Sicilian Fava Bean Spread

Fava Beans are only available certain times of the year and require some prep. They are delicious, however, and worth the effort. In Morocco, this is known as Bassara.

Ingredients
1
cup fava beans, shelled but with silvery-white skin intact
2
tbsp fresh lemon juice
1
clove garlic, crushed
1/4
cup EVOO
1/2
tsp salt (or more to taste)
1/2
tsp black pepper
10
12 slices of baguette, lightly toasted
shavings of fresh romano or parmesan cheese
fresh basil or dill (for garnish)
Directions
1.
Blanch fava beans in salted boiling water for approx 3 minutes, drain and place directly into an ice bath to halt cooking.
2.
Once cool, drain again and pop the green bean out of it's white skin into the bowl of a food processor.
3.
Add lemon juice, garlic, salt and pepper to the bowl and pulse till a chunky paste is formed.
4.
Slowly add EVOO while pulsing to create a textured paste.
5.
Top toasted baguette with spread, a shaving of cheese, and a sprinkle of fresh herbs for garnish.
