Mediterranean Lamb Meatballs With Yogurt Sauce

These look great served in a clear glass bowl or mason jar where all of the layers are visible.

Ingredients

cloves garlic, crushed

tbsp fine bread crumbs

tbsp onion, finely chopped

egg

tbsp toasted pine nuts

tsp salt
1/2
tsp black pepper

tsp capers
1/4
cup Greek olives, pitted and halved
1
tbsp chopped scallion
2
chopped fresh mint or parsley
1
cup low-fat plain Greek yogurt
1
clove garlic, crushed
2
tbsp red onion, finely chopped
1/2
tsp ground cumin
1/2
tsp ground coriander
1/2
tsp salt
Directions
1.
For the meatballs: Combine lamb, garlic, bread crumbs, onion, egg, pine nuts, salt, and pepper in a mixing bowl.
2.
Use your hands to bring all of the ingredients together, but do not over-mix (this makes for a tough meatball).
3.
Form the mixture into balls that are about the size of a ping-pong ball (they will shrink during the cooking process) and place on a cookie sheet lined with parchment paper.
4.
Bake at 350 degrees for approx 15-20 minutes until cooked through.
5.
For the yogurt sauce: Combine the last six ingredients in a bowl and chill at least 1 hour to develop flavors.
6.
To serve: Toss meatballs with chopped fresh herbs, scallion, olives, and capers. Serve sauce on the side.
