French Onion Soup

It sounds really weird but it's surprisingly tasty.

Prep
Cook
Serves 2people
Ingredients
2
onions, peeled and finely sliced
75
butter
1/2
liter beef stock
1
bay leaf
1/2
garlic clove, crushed
4
slices of baguette
75
grated cheese
olive oil
Directions
1.
Melt the butter and some olive oil in a large saucepan over a medium heat. Add the onions and garlic and cook for 15-20 minutes until they are soft and have turned a caramel colour.
2.
Add the stock and bay leaf. Bring to the boil and then reduce the heat and simmer for about 30 minutes, stirring occasionally.
3.
Meanwhile, toast the baguette under your grill. When the soup is cooked remove the bay leafs and dish up into ovenproof bowls. Put a couple of slices of the baguette on top of each soup.
4.
Sprinkle the bowls with cheese and then put under the grill for 2-3 minutes until the cheese has melted.
5.
Serve and enjoy!
