Hearty Pasta Soup

Filling and freezes well.

Ingredients
1
carrot, peeled and chopped
1
small onion, peeled and chopped
1/2
liter chicken or vegetable stock
200
cans of chopped tomatoes
100
frozen peas
125
fresh filled tortellini (spinach and ricotta is nom!)
basil leaves, chopped
grated cheddar cheese
Directions
1.
Heat some oil in a saucepan and cook the onions and carrots for 3-4 minutes until soft. Add the stock and tomatoes and simmer for 10 minutes.
2.
Add the peas and pasta and then simmer for 5 minutes until the pasta has cooked.
3.
Pour into bowls, add the cheese and basil on top, serve with buttery bread and enjoy!
