Minestrone Soup

This is actually really easy to make and very tasty.

Ingredients
olive oil
1
small onion, finely chopped
1 1/2
garlic cloves, finely chopped
1
celery stick, finely chopped
1
small courgette, halved and sliced
75
french (or green) beans, cut into short lengths
650
ml vegetable stock
1
tsp tomato puree
200
cans of cannellini beans, drained
50
pasta
1/2
tbsp p pesto
grated cheese
Directions
1.
Heat the oil in a large pan over a low heat. Add the onion and fry for 5 minutes until soft.
2.
Add the garlic, celery and courgette. Cook for 10 minutes.
3.
Stir in the french beans, vegetable stock and tomato puree and bring to the boil. Reduce the heat and then cover and simmer for 5 minutes.
4.
Add the cannellini beans and the pasta. Bring to the boil and then simmer for 10 more minutes.
5.
Stir in the pesto and serve with grated cheese on top, bread on the side and enjoy!
