Vegetarian Tagine

It's an odd mixture of sweet and savoury but it works really well and it's a good winter warmer meal.

Ingredients

onion, finely chopped
1/2
garlic clove, finely chopped
1/2
small sweet potato, diced
1/2
head of fennel, quartered
4
new potatoes, halved
1/2
red pepper, deseeded and coarsely chopped
1/2
small aubergine, chunked
1
courgette, chunked
small piece of ginger, peeled and grated
1/2
tsp ground cinnamon
1/2
tsp ground cumin
1/2
tsp ground coriander
150
ml vegetable stock
2
tomatoes, quartered
50
dried apricots, halved
30
whole almonds, blanced
1/4
lemon, juiced
1/2
tbsp p honey
200
cans of chickpeas
portion of rice
oil
Directions
1.
Heat the oil in a large saucepan. Add the onion, garlic, sweet potato, fennel, potatoes, red pepper, aubergine and courgettes. Cook for 5 minutes.
2.
Stir in the spices, ginger, vegetable stock and tomatoes and cook for an hour.
3.
Stir in the rest of the ingredients and cook for a further 20 minutes.
4.
During this last 20 minutes cook the rice, then drain and dish up.
5.
Serve the rice with the tagine and enjoy!
