Basic Lasagna Bolognese

Ingredients
Bolognese Sauce

tbsp Olive Oil

cup Garlic, chopped
1/2
cup Onion, finely chopped
1/4
cup Celery, finely chopped
1/4
cup Carrots, finely chopped
1/4
cup Red Bell Pepper, chopped
1/4
cup Green Bell Pepper, chopped

kilo Ground Beef
1/2
tsp Dried Oregano
1/2
cup Tomato Paste
1
can (14 oz) Whole Peeled Tomatoes, packed in water

cups Del Monte Tomato sauce
1
cup Water
1/2
tsp Freshly ground Black pepper
1 1/2
tsp Salt (add more if needed)

cups Quick melt Cheese, grated
1
cup Mozzarella Cheese, grated
1
Beef cube
Bechamel Sauce
4
cups Milk
4
tbsp Unsalted Butter
5
tbsp All-purpose Flour
1
cup All-purpose Cream (Nestle)
1
Chicken cube
Salt & Pepper to taste

sheets Italian lasagna noodles
Directions
Prepare the Meat Sauce
1.
Combine garlic, onion, celery, bell peppers and carrot in saute pan with olive oil and cook over medium heat until onion turns pale gold.
2.
Add the beef, cook until browned and most of the liquid has dried out. Sprinkle with the oregano, salt & pepper.
3.
Add tomato paste until color changes to dark red.
4.
Stir in canned tomatoes, tomato sauce & Knorr beef cube. Bring to a simmer and reduce the heat to medium. Simmer for 45 mins. to 1 hour. Stir at least every 20 mins. Taste and adjust seasoning.
Bechamel White Sauce
1.
In a pan, melt the unsalted butter with the flour over low heat. Stir rapidly with a spoon.

Slowly add the milk & chicken cube to your butter and flour mixture. Stir constantly using a whisk.
3.
Cook at low heat until the sauce begins to thicken. Add the cream. Keep stirring until the sauce thickens.
4.
Season with some salt & pepper. Remove from the heat.
Prepare the Lasagna
1.
Preheat oven to 375°F or 165°C. Cook the lasagna according to instructions. About 8 mins in boiling water. Drain. Lay the individual lasagna noodles out on kitchen towels or a big tray, brush with a little bit of oil, so they do not stick together.
2.
Make sure your baking pan is non-reactive - pyrex or stainless steel. Do not use an aluminum pan as it will react with the acidity of the sauce and ruin the flavor.
3.
Put a layer if the meat sauce first. Then layer with lasagna noodles. Add the meat sauce again then the white sauce. Sprinkle with grated Quickmelt cheese or Mozzarella cheese. Repeat 2 to 3 more times. Top with a final layer of white sauce then sprinkle with mozzarella cheese.
4.
Put lasagna into the middle rack of a pre-heated 375°F oven or 165°C. Bake for 30-40 minutes, until the top begins to get lightly browned. Remove from oven and let cool 5-10 minutes before serving.
