Vegetables, Roasted

A go-with for any roasted meat, or on its own for a vegetable only meal.

Ingredients
6
cups vegetables of any kind, chopped:
onion, potato, garlic, carrot, turnip, peppers, celery, green beans, cauliflower, ...
3
tbsp vegetable oil
2
tbsp lemon juice
1
tsp salt
1/2
tsp pepper
other seasoning of your choice (oregano, curry, BBQ, dill,...)
Directions
1.
Wash, peel, and chop vegetables as desired, all about the same size. Place in large bowl.
2.
Pour remaining ingredients over and mix well.
3.
Place in oven proof dish and roast, uncovered, along side meat for about an hour, stirring once or twice.
4.
Poke with fork to test for doneness and place in serving dish. Keep warm till ready to serve.
