Keto Sesame Seed Buns

These are quick to whip up and great for burger night! I also use them to make breakfast sandwiches. They freeze and defrost really well so they can be made ahead of time.

Ingredients
1
cup mozzarella cheese
2
oz cream cheese
3
egg whites
1/2
cup whey protein isolate
1 1/2
tbsp psyllium husk fiber
1
tsp baking soda
1/8
tsp salt
seasonings of choice (i like to add onion and garlic powder, but you can use any herb or spices)
1/3
cup hot water
3
tbsp butter
sesame seeds for topping
Directions

Preheat the oven to 350 F and prep a sheet pan with parchment paper or grease. I use a food processor for this, but it can be done by hand or with a mixer as well. Place all dry ingredients into the mixer or processor, blend a couple times to mix. Place water and butter in a microwave safe bowl then microwave for a minute or until hot and the butter is melted. Pour into the mixer and blend until smooth. Add the eggs and cheeses and blend until smooth. Let batter rest for 5 minutes then pour it into a bag for piping ( i just use a zip top bag). Pipe the batter into circles about 3 inches in diameter, they will spread a little while cooking so leave room between each one. sprinkle sesame seeds on top (I also add a little onion powder). This could also be piped into longer shapes for hot dogs! If not using parchment paper then remove the buns from the pan immediately with a spatula to avoid sticking. let cool completely before using.
