Carbonara

Ingredients
250
gr Cooked Spaghetti
1
tbsp Olive Oil
200
gr Bacon or Guanciale or Panchetta, chopped (add more for garnish)

Egg Yolks
1/2
cup Cream (cooking cream - not so sweet/ all-purpose cream - sweeter)
1
cup Parmesan Cheese (add more for garnish)
1
tbsp Salted Butter
Directions
1.
Cook the spaghetti in boiling water until al dente.
2.
Using a whisk, lightly beat the egg yolk, cheese and cream together in a bowl. Set aside.
3.
Heat oil in a frying pan over medium-high heat, add bacon and cook for 3-4 minutes until lightly golden and until bacon is crispy.
4.
Drain the spaghetti from the water. Immediately add the very hot spaghetti to the pan with bacon. Add the cream, parmesan and egg yolk mixture. Add some pasta water to lighten the sauce. Add the butter and mix well.
5.
Season with salt and freshly cracked black pepper.
6.
Serve with more grated parmesan cheese on top.
