Broccoli Lasagna Roll Ups

I make this when I want to change up my dairy dinners. A bit more effort to make but it tastes good!

Ingredients

Lasagna Noodles

tbsp Vegetable Oil

Pkg Chopped Broccoli, thawed and squeezed dry

tbsp Minced Scallions
1
Pkg Ricotta Cheese
1/3
cup Grated Parmesan Cheese
1
Egg, slightly beaten
1/2
tsp Salt
1
Jar Spaghetti Sauce
1/2
cup Water
1
cup Shredded Mozzarella Cheese
Directions
1.
Cook noodles, and set aside. Best to lay them out separately so they don't all get attached to eat other.
2.
Heat oil on medium. Sauté broccoli and scallions for 5 minutes. Stir in the ricotta, parmesan, egg and salt.
3.
Preheat the oven to 350 degrees. Combine sauce and water and spoon half of it into a baking dish.
4.
Lay noodles on wax paper. Spread some cheese mixture on each noodle, and roll it up. Place rolls in the dish.
5.
Top the rolls with the mozzarella cheese and the remaining sauce. Cover loosely.
6.
Bake for 30 minutes.
