Easy Sausage Stuffed Mushrooms

Jennifer & Dave This recipe is from Allrecipes.com. We decided to host a 50th birthday party for Dave and wanted to make some new recipes. This one caught our eye, so we did a dry-run to share with neighbors. To say they were eaten quickly is an understatement! We did make them for the 50th birthday; they were a hit there as well. This recipe serves 12 for cocktails

Ingredients

large mushrooms, stems removed, or more as needed
1
lb bulk hot Italian sausage
1
onion, diced
1
White Onion, Large

oz grated Parmesan cheese, divided
1/4
cup Italian bread crumbs
1
tsp minced garlic
1
tsp chopped fresh parsley
Directions
1.
Preheat oven to 350 degrees F (175 degrees C).

Hollow out each mushroom cap, reserving scrapings.
3.
Heat a skillet over medium-high heat. Cook and stir sausage, onion, and reserved mushroom scrapings in hot skillet until sausage is browned and cooked through, 4 to 6 minutes. Drain and discard grease; return sausage mixture to skillet.

Stir 3 ounces Parmesan cheese, bread crumbs, garlic, and parsley into sausage mixture. Cook and stir until heated through, 3 to 5 minutes.

Stuff each mushroom cap with sausage mixture and place on a baking sheet.
6.
Bake stuffed mushrooms in the preheated oven for 12 minutes. Sprinkle remaining 1 ounce Parmesan cheese over mushrooms and bake until mushrooms are cooked through and cheese is melted and bubbling, about 3 minutes.
