Holiday Almond Toffee

Jennifer and Dave Lorie, Dave's sister, is known for her desserts. This recipe in particular comes out every Christmas season, during which she usually makes 15-20 batches for parties and gifts. She made it with me once and I have shared it with work colleagues, friends and family (although, I usually let her make it now!). Careful with this one - once you have one piece, it's very hard to stop! NOTE: This recipe requires a candy thermometer. An offset spatula also helps

Ingredients

cups butter
2
cups sugar

tsp salt
1
tsp vanilla
5
oz sliced almonds (plus 2 ½ oz more to put almonds on top)

oz chocolate chips
Directions
1.
Line cookie sheet with foil. Spread almonds in a thin, even layer

Put first four ingredients in heavy sauce pan. Heat over medium heat, stirring constantly, until candy thermometer reaches 300 degrees (you must use a candy thermometer)
3.
Pour toffee mixture over almonds and spread evenly (i use an offset spatula to help)
4.
Cool for 1 minute, then sprinkle chocolate chips over the toffee. Wait a few minutes until chocolate softens, then spread evenly over toffee
5.
Grind remaining almonds and sprinkle over chocolate
6.
Cool. Then break into bite size pieces
