Zoe's Peanut Butter Mousse Pie

This is a bit more complicated than your average dessert, but it tastes so good! Boys love it too. (Tip: When your guests are boys, anything chocolate or peanut butter goes!)

Ingredients

cups Chocolate Cookies, crushed

cup Peanuts, chopped
1/4
cup Sugar

tbsp Margarine, melted
1 3/4
cups Whipped Cream
8
oz Cream Cheese, softened (I use non-dairy Tofutti when I make this for Shabbos)

cups Icing Sugar
2
tbsp Vanilla
1/4
cup Sugar
1/4
cup Whipped Cream
1
cup Chocolate Chips
1/2
cup Peanuts, chopped
Directions
1.
For the Crust: Combine the crushed cookie crumbs, peanuts, sugar and margarine and press into the bottom of a spring form pan. Bake it for 15 minutes.

For the Mousse: Beat the whipped cream and set it aside.

Beat the peanut butter and cream cheese together. Stir in the icing sugar and vanilla. Fold in the whipped cream.

Pour the filling into the cooled crust and put it in the fridge for 2 hours.

For the topping: In a medium pan combine sugar and whip. Stir until it boils. Remove from the heat, and add the chocolate chips, stirring until they are melted.

Spread topping over the cake and garnish with extra peanuts,
