Bacon Thyme Stuffed Mushrooms

Stuffed with a glorious mixture of bacon breadcrumbs and herbs and baked until golden brown and sizzling, these mushrooms are always a big hit at get-togethers.

Ingredients
1/2
cup Italian-style dried bread crumbs
8
slices of bacon cooked and chopped
1/2
cup grated Pecorino Romano cheese
2
garlic cloves, peeled and minced
2
tbsp fresh Italian parsley, washed dried and chopped
1
tbsp fresh mint leaves, chopped
1/3
cup extra-virgin olive oil

large white mushrooms, stemmed (2 1/2-inch-diameter)
Directions
1.
Preheat oven to 400 degrees F.

In a mixing bowl, stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil.

Drizzle a heavy large baking sheet with about 1 tablespoon olive oil to keep the mushrooms from sticking to the baking sheet. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom.
4.
Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Allow to cool for about 2 minutes. Serve
