Chicken With Capers

Ingredients
Boneless and skinless chicken thighs
Capers
Olive oil
Butter
White wine
Garlic salt (Larry’s with parsley)
Cracked pepper
Lemon Juice
Directions
1.
Put a combo of butter and olive oil in your skillet. Sometimes I use non-stick frying pan. Melt butter and oil until it bubbles.
2.
I use the combo because I like the butter flavor and the oil keeps the butter from burning.
3.
Butterfly thighs, pat the thighs dry and season both sides with the garlic salt and pepper.
4.
When pan is ready put seasoned thighs in and brown on both sides until done. Medium heat. Keep turning thighs over.
5.
When done put thighs on a warm plate.

Deglaze pan with the wine, juice of a lemon, capers and chicken juice that has accumulated on the dish the chicken is on. Once deglazed till almost gone take off heat and put one to two tablespoons of butter in the pan and with a wooden spoon incorporate it into the mixture in the pan until it makes a sauce that is not separated.
7.
The amount of capers is dictated by your taste. Do not put liquid from the caper jar into the sauce. It will make it too salty.
8.
Put chicken on plate and pour over sauce onto plate.
