Steak Diane

Ingredients
2
boneless sirloin steaks 3/4”thick (I sometimes use filets but do not pound them)
1/4
cup butter
2
tsp dry mustard
1/2
tsp salt
2
tbsp sliced green onions (I sometimes use a little more)
2
tbsp olive oil
1
tsp ground black pepper
2
tbsp Worchester sauce
4
tsp lemon juice
Directions
1.
Place steaks between sheets of plastic paper and pound to 1/2 “ thick (not filets)
2.
Melt 1/4 c butter in large skillet. Stir in mustard, salt, green onions and sauté 1 minute. Drizzle 1 Tb olive oil over both steaks and press into steak with back of spoon. Then sprinkle with half the black pepper and flip over steaks. Cook oil pepper side down for two minutes spooning juices over meat. Rub remaining oil over and black pepper onto uncooked side of steak, turn steaks over and cook 2 minutes longer. Steaks should be pink inside. Remove from pan and keep warm.

Add 2 Tbs of butter, Worchester sauce and lemon juice to pan. Blend well and heat quickly. Pour over steaks and serve.
