Sweet Potato Casserole

Ingredients

medium sized sweet potatoes
2 1/2
cans crushed pineapple
3/4
cup butter
1 1/2
cups brown sugar, packed
1/2
cup California sherry
1/8
tsp salt
1/2
tsp nutmeg
3/4
cup raisins
1/2
cup chopped pecans
Directions
1.
Boil potatoes until tender, peel and slice into half inch pieces. Place layers of sweet potato in a casserole, top with layers of pineapple. Repeat layers to top of dish. Gently heat butter, sugar, sherry, salt and nutmeg, stirring until sugar is dissolved. Pour over sweet potatoes and pineapple, sprinkle with raisins and pecans.

Bake in moderate 350 degree oven for 1 hour.

Good dish to serve with pork and with rose.
