Melt butter in large saucepan and spoon spinach into hot butter. Cook, stirring for 3 minutes. Stir in flour and continue cooking, stirring for another 3-5 minutes. Add seasoning and stir in cream gradually. Bring to a simmer and cook over low heat for 5-10 minutes. Correct seasoning and add more cream if you wish.

Frozen chopped spinach is important, drain as much water out as possible. Squeeze with hands. Secret is to puree until there is no grainy texture and to keep tasting until you get the seasoning correct.
