Torta Di Ricotta (Ricotta Cake)

oz part skim ricotta

oz sugar
10.8
oz flour
3
eggs separated
1
lemon juice and zest
1
envelope italian lievito (yeast) found in the italian market only
some powdered sugar
Directions
1.
Preheat oven at 325 degrees and grease bundt pan
2.
In electric mixer with paddle attachment mix ricotta and sugar very well
3.
Add flour, levity, 3 egg yolks, lemon juice and grated peel
4.
In a separate bowl with electric mixer mount egg whites well, add them to cake mix and blend all
5.
Pour in pan and bake at 325 for 30-40 minutes till done
6.
Cool cake, invert on a plate and sprinkle it with powdered sugar.
