Strawberry Rhubarb Pie

I LOVE this pie. You can buy frozen pastry for the crust or make your own. Sometimes I switch it up and use different berries, like blueberries, raspberries or wild berries- just choose what you like!

Ingredients

cups Strawberries, chopped

cups Rhubarb, chopped

cup Brown Sugar
1/2
cup White Sugar
1
tsp Cinnamon
1
tsp Nutmeg
1
tbsp Cornstarch
1/4
cup Flour

Recipe Pastry
Directions
1.
Mix the fruit, brown sugar, sugar, cinnamon, nutmeg, corn starch and flour in a large bowl. Stir until well combined. Let this stand for 30 minutes. If it looks too juicy, just add more corn starch.

Preheat the oven to 400 degrees.

Divide the pastry in half, and press half into the bottom of a pan. Pour in the filling. You can use the rest of the pastry as you like- lattice the top, make a rim, cover completely or just leave it out altogether.

Bake on high for 15 minutes. Lower the oven and continue baking for another 40 minutes.
