Heat half of the oil in a frying pan. Add the diced bacon and cook for 3-4 minutes, or until crisp. Remove with a slotted spoon and set aside.

Toss the cubes of bread in the pan over a high heat for about 4 minutes until crisp and golden. Remove with a slotted spoon and set aside.

Pour the rest of the oil into the frying pan and heat. Toss the spinach in the oil for about 3 minutes. Turn into a serving bowl and sprinkle with the bacon and croutons.
