Preheat the grill to high. Place the bacon on the grill pan and grill for 3-4 minutes, turning once, until crisp. Set aside to cool and then cut into little pieces.

Meanwhile, lightly toast the walnuts in a dry frying pan for a couple of minutes.

Toss the pears in 1/2 tbsp of the lemon juice. Put the pears, watercress, walnuts and bacon into a salad bowl.

Mix the olive oil, rest of the lemon juice and honey in a bowl, whisking until smooth. Pour over the salad and toss well to combine.
