Heat oil in pan over high heat and add onion and chicken in batches. Brown, adding more oil for each batch if needed. Transfer to a plate and keep warm.

Heat remaining oil and add curry paste and capsicum (and other veg) and stir fry until fragrant (2 min.). Add choy sum and coconut cream and bring to a boil. Add chicken, onions, lime juice, fish sauce and sugar and stir fry until hot.
