Heat oil in a heavy, large saucepan over med. heat. Add onion, carrots and garlic. Saute until softened, about 12 min. Add beef and sausages to pan. Saute until cooked through, breaking up meat with back of spoon, about 5 min. Add remaining ingredients. Cover and simmer until flavours blend and sauce measures about 10 C, stirring occasionally, about 15 min. Discard bay leaf. Cool.

Preheat oven to 350.

Combine ricotta and marscapone cheese with parmesan. Mix in spinach. Season to taste with S&P. Mix in eggs.

Cover tightly with foil. Bake for 40 minutes; uncover and bake until hot and bubbly - about another 40 minutes.
