Manicotti

Manicotti means sleeves. Crepes can be made with a 2:2:1 ratio of water:flour:egg by weight. The ratio makes 2 crepes per egg, which makes it easy to scale to any number of guests.

cup Water

cup Flour

Eggs
Directions
1.
Mix Water flour and egg together to form a batter. The batter should sit for 15-20 minutes so the flour can hydrate.
2.
Heat a small frying pan. Pour enough batter to cover the bottom of the frying pan.
3.
Fry for 1 minute
