medium potatoes (about 3 lbs.), peeled and cut into cubes

lb bacon, cooked and crumbled

green onions, chopped

celery ribs, finely chopped

tbsp diced pimientos, drained

cup mayonnaise

cup sour cream

Directions

Cook potatoes in boiling water 15-18 minutes or until tender. Drain and let cool slightly.

Place potatoes in a large bowl. Add bacon, chopped green onions and next 4 ingredients. Stir together mayo and sour cream until well blended. Pour over potato mixture, tossing gently to coat.

Cover and chill at least one hour if serving cold. Garnish if desired.
