Red Beans & Rice

Ingredients

tbsp Vegtable Oil
1
package (12.8 oz.) Smoked Andouille Sausage (thinly sliced)
1
med. Sweet Onion (diced)
1
Green Bell Pepper (diced)
2
celery ribs (diced)
2
tbsp tomato paste
3
cloves garlic (minced)
1 1/2
tsp cajun seasoning
3
cans (15 oz) red beans
3
cups chicken stock
1
tsp hot sauce
1
bay leaf
2
tbsp fresh parsley (chopped) (Optional)
2
cups rice (cooked)
salt & pepper
Directions
1.
Cook rice.
2.
Heat oil in large pot or Dutch oven over medium heat.
3.
Add sausage. Cook until lightly browned then set aside.
4.
Add onion, bell pepper and celery. Cook about 3--4 minutes.
5.
Stir in tomato paste, garlic, and Cajun seasoning until fragrant.
6.
Add red beans, chicken stock, hot sauce, bay leaf, and sausage.
7.
Season with salt and pepper.
8.
Bring to a boil, cover, reduce heat and simmer for 15 minutes.
9.
Uncover and continue to simmer for additional 15 minutes.
10.
Using a wooden spoon, mash the beans until slightly thickened.
11.
Season with salt and pepper to taste.
12.
Serve immediately, topped with rice and garnished with parsley.
