Homemade Margherita Pizza

Ingredients
Pizza Dough:
5
cups unbleached all-purpose flour

tsp granulated sugar
1
tsp active dry yeast
1 1/2
tsp salt
14
oz warm water (105-115 F)

tbsp extra virgin olive oil
flour for dusting
Pizza Sauce:
2
cups pureed or crushed tomatoes
4-6
cloves garlic
2
tsp evoo
4-6
pinches of salt
1/2
tsp black pepper
Toppings:
4-6
tbsp finely grated parmigano-reggiano cheese
7-10
oz fresh mozzarella
10-12
fresh basil leaves
dried red pepper flakes (Optional)
Directions
1.
Prepare the Dough:

In a large bowl, whisk together , the flour, sugar, yeast, and salt.
3.
Add warm water and olive oil.
4.
Mix with wooden spoon until the dough begins to come together.
5.
Place dough onto well floured surface and knead dough for 3 minutes.
6.
Knead until dough is smooth, slightly elastic and tacky.
7.
Lightly grease a large bowl with evoo.
8.
Place dough into bowl, cover with kitchen towel and allow to rise in warm, dry area for at least 2 hours.
9.
Mix all sauce ingredients together and set aside.
10.
Place pizza stone in oven and preheat oven to 550 (or as high as it will go).
11.
Separate dough into four equal portions and roll or toss into desired shape.
12.
Either remove pizza pan from oven or build pizza on a slide.
13.
Drizzle lightly olive oil on dough.
14.
Spread approximately 1/4 sauce over dough.
15.
Top pizza with desired toppings.
16.
Bake for 7-8 minutes.
17.
Slice and serve.
