Ginger Nuts

Makes a lot. Can easily halve the recipe.

Ingredients

ml plain flour
20
ml bicarbonate of soda
10
ml ground ginger
10
ml mixed spice
pinch of salt
250
gr margarine softened
130
ml golden or maple syrup
2
eggs
2
cups sunsweet sugar
Directions
1.
Combine flour, spices, bicarb and salt in a large mixing bowl.

In another bowl cream together the margarine, sugar, syrup and eggs.
3.
Add the two mixes together and mix well, first with a big spoon and later with your hands.
4.
Roll into balls (about 1/2Tbsp worth) and place on a greased baking tray.
5.
Bake at 180*C until golden brown, about 15 minutes. Remove from the oven and allow to cool on a wire rack. (They will be soft when they first come out the oven, but harden as they cook.)
6.
Store in an airtight container for up to a month.
