Spanish Rice

I swear this is the food I have the earliest memory of - this was truly a staple of my childhood. Now, as a semi-adult, this is a core recipe of mine because it is so easy to customize and even make into a main dish. It just took me a couple tries to realize that the recipe calls for tomato SAUCE not tomato PASTE. You live and you learn, I guess.

Ingredients

cup rice
oil, to brown rice

tsp cumin

tsp garlic powder
2-2 1/2
cups hot water
1-8
oz can of tomato sauce
salt, to taste
1/2
onion, chopped
1/2
bell pepper, chopped
Directions
1.
Brown rice with oil. Add onion and bell pepper and sauté until slightly tender. Add the remaining ingredients and stir to combine. Cover and simmer for 20-25 minutes, stirring every now and again.

Cover and simmer for 20-25 minutes, stirring every now and then.

Best served with Mom's refried beans or inside a burrito with all the toppings.
