Quick Beef Soup Without The Beef

I love to see a cherished family recipe that can withstand the test of time. This beef soup was so nice to have for dinner after a long and hard day of fifth grade right as the weather started to turn cold. Now, it holds a special place in my heart as one of the recipes that the family continued to love even after we stopped eating meat - and its just as good as before!

Ingredients
1
cup chopped onion
2
cloves garlic, finely chopped
1
can (28 oz) tomatoes, undrained
6
cups water
6
beef bouillon cubes
1/4
tsp pepper
1/2
cup uncooked orzo
1 1/2
cups frozen peas, carrots, and corn vegetable blend
French bread
Directions
1.
Sauté onion and garlic over medium-high heat until tender. Set aside.
2.
Process tomatoes with juice in a blender or food processor until smooth. Add tomatoes, water, bouillon cubes, and pepper to onion mixture.
3.
Bring to a boil and then reduce heat to low. Simmer uncovered for 20 minutes. Add orzo and vegetables and simmer for an additional 15 minutes.
4.
Serve with French bread - or any bread really, we're not picky!
