Granny's Zucchini Bread

Ingredients
3
cups flour
2
tsp baking soda
1/2
tsp baking powder
1
tsp salt
3/4
cup chopped pecans or walnuts
3
eggs
2
cups sugar
1
cup crisco oil
2
tsp vanilla
2
cups grated zucchini
1-8
oz can crushed pineapple (well drained)
Directions
1.
Combine dry ingredients and nuts, set aside
2.
Beat eggs lightly in large mixing bowl
3.
Add sugar, oil, and vanilla
4.
Beat until creamy
5.
Stir in zucchini and pineapple
6.
Add dry ingredients stirring only until dry ingredient are moistened
7.
Spoon batter into 2 well greased and floured loaf pans
8.
Bake @ 350 degrees for 1 hr or until done
9.
Cool 10 minutes in pans, turn out on rack and allow bread to cool completely
