Filet Mignon And Balsamic Strawberries

Ingredients

cup strawberries, sliced
1/4
cup brown sugar
1/4
cup balsamic vinegar
1
tbsp olive oil

(6 oz) beef tenderloin fillets
Salt and pepper to taste
1
tbsp butter
Directions
1.
Mix strawberries, brown sugar, and balsamic vinegar in a bowl and let sit for 1-3 hours, stirring occasionally.
2.
Pre-heat oven to 400.
3.
Heat olive oil in an oven safe skillet over medium heat.
4.
Sprinkle fillets with salt and pepper and sear each side until well browned (about 2 minutes).
5.
Slide skillet into oven and cook for about 10 minutes.
6.
Transfer to a plate and tent with foil to rest.
7.
Pour steak juices from skillet into a small sauce pan.
8.
Strain strawberries and discard liquid.
9.
Add strawberries to steak juices and let simmer.
10.
Melt butter into sauce.
11.
Serve each filet with about 1/2 C. of strawberry sauce and freshly ground pepper.
