Chicken Mozzarella Pasta With Sun Dried Tomatoes

Ingredients

garlic cloves, minced

oz sun-dried tomatoes

tbsp olive oil

chicken breasts

tsp salt
1/4
tsp paprika
1
cup half and half
1
cup mozzarella cheese
1
package of penne pasta
1
tbsp dried basil
1/4
tsp red pepper flakes
1/2
cup reserved pasta water
Directions
1.
In a large skillet, saute garlic and sun-dried tomatoes (drained), in 2 T. olive oil (takes about 1 minute).
2.
Remove the tomatoes.
3.
Cut chicken into cubes and lightly cover in salt and paprika.
4.
Cook chicken in same skillet.
5.
Cook pasta according to package instructions.
6.
Reserve some pasta water, then drain.
7.
Slice tomatoes into smaller pieces and add them back to the skillet.
8.
Add half and half and mozzarella cheese to the skillet and bring to a boil.
9.
Immediately reduce to a simmer and cook, constantly stirring until all cheese melts and a creamy sauce forms.
10.
Add pasta to the skillet.
11.
Add 1 T. basil and at least 1/4 tsp. crushed red pepper flakes.
12.
Stir to combine.
13.
If the sauce is too thick, add about 1/2 C. pasta water to the skillet to make it thinner.
14.
Season the chicken pasta with more salt, pepper, and crushed red pepper flakes to taste.
15.
Let simmer for a few minutes for flavors to combine.
