cup uncooked quinoa

cup light coconut water

tbsp water

tbsp brown sugar

tsp salt

cup sliced strawberries
1
cup sliced banana
1/4
cup unsweetened flaked dried coconut

Directions
1.
Place quinoa in fine sieve and place in large bowl
2.
cover quinoa with water
3.
using hands, rub grains together for 30 sec
4.
rinse & drain
5.
repeat twice
6.
combine quinoa, milk, water, sugar, & salt in saucepan
7.
bring to boil
8.
reduce heat & simmer for 15 min until liquid absorbed
9.
stirring constantly last 2 minutes
serving
1.
in each bowl put 2/3 cup of quinoa
2.
top each bowl with 1/3 cup strawberry & banana
3.
top each bowl with 1 tbsp coconut
