Soft Pretzel Bites

I also like to roll these in cinnamon sugar and eat them with cream cheese frosting. This recipe also makes a lot of pretzels, so I usually half it.

Ingredients

cups warm water

tsp yeast

cups flour

oz butter, softened
Vegetable oil

cups water
2/3
cup baking soda

tbsp butter, softened
Directions
1.
In an electric mixer combine warm water, sugar, yeast, and salt.
2.
Add flour and butter.
3.
Knead until the dough is smooth and pulls away from the side of the bowl (about 4-5 minutes).

Remove dough from bowl and transfer it to a well oiled bowl.
5.
Cover the bowl tightly with plastic wrap and set in a warm place for 50-55 minutes or until the dough has doubled in size.
6.
Preheat the oven to 425 and line two baking sheets with parchment paper.
7.
Bring the 10 cups of water and the baking soda to a rolling boil.
8.
In the meantime, turn the dough out onto a slightly oiled work surface into 8 equal pieces.
9.
Roll out each piece of dough into a 24-in rope.
10.
Slice each rope into 1 1/2 in. pieces.
11.
Place a lightly damp towel over the pretzel pieces to prevent them from drying out while you roll and cut the other pieces.
12.
Using a slotted spoon, lower a handful of pretzel pieces into the boiling water and boil them for 30 seconds, flipping them around in the water with the spoon a couple of times.
13.
Remove the pretzel pieces from the water using the spoon, drain as best you can, and place them on the baking sheets.
14.
Brush the top of each pretzel with the melted butter.
15.
Bake until a dark, golden brown color (about 10-12 minutes).
16.
Brush with remaining melted butter before serving.
