Slow Roasted Fish With Fennel & Citrus

lb skinless salmon
1
fennel bulb, sliced very thin
1
orange - blood, navel or cara cara thinly sliced
1
lemon, thinly sliced
4
sprigs dill or parsley
kosher salt & pepper
olive oil
Directions
1.
Preheat oven to 275. Combine fennel, citrus, herbs and 2 Tbsp olive oil in a shallow 13x9x2 or 10x2 baking dish. Season with salt & pepper. Drizzle approximately 2-3 Tbsp oil over fish. Roast until salmon is done. Start checking at 30 minutes.
