Pineapple Upside Down Cake

Ingredients

box yellow cake mix
1/2
cup butter (1 stick)
1/2-1
cups brown sugar, depending how sugary you want it
1
can pineapple slices in their own juice
1
can crushed pineapple in it’s own juice
Directions
1.
Preheat oven according to box directions.
2.
Place 13 x 9 cake pan in the oven with the butter to melt it.
3.
Drain both cans of pineapple and save the juice
4.
Mix cake mix according to box directions substituting the water for the juice.
5.
Stir in ¼ cup crushed pineapple.
6.
Remove pan from oven once butter is melted and just slightly browns.
7.
Stir brown sugar into the butter, spreading evenly in the pan.
8.
Stir in as much of remaining crushed pineapple as you want.
9.
Place sliced pineapple in pan pushing to bottom.
10.
Pour in cake mix and spread evenly.
11.
Bake according to box directions.
12.
Bake 42 to 48 minutes (44 to 53 minutes for dark or nonstick pan) or until it does jiggle and toothpick inserted in center comes out clean.
13.
Immediately run knife around side of pan to loosen cake. Place a heatproof serving plate upside down onto pan; turn plate and pan over. Leave pan over cake 5 minutes so brown sugar topping can drizzle over cake; remove pan. Cool 30 minutes. Serve warm or cool. Store covered in refrigerator.
