Brandy Lapthorne's Baked Halibut

Growing up in Alaska, fishing was a huge part of our family’s lifestyle and as a part of our winter subsistence. Coming from a family where my mother and my sister don’t like the taste of fish, my grandmother shared this recipe, which changed their minds instantly! I use this recipe on all the fish I cook, from cod, rockfish, and halibut to salmon. Every time I cook fish for friends and family, I am asked to share this recipe.

Ingredients
Topping Ingredients

cup Sour Cream

tsp Dill Weed
1/2
cup Grated Parmesan Cheese
1/2
tsp Salt
1/4
cup Butter, Room Temp
1/4
tsp Black Pepper
Main Ingredient
1
Large Filet of Fish, Skinned and Deboned
Directions
1.
Preheat Oven to 375 degrees.
2.
Mix all topping ingredients into a small bowl.
3.
Line baking dish with aluminum foil.
4.
Rinse filet of fish and pat dry with a paper towel and lay the filet of fish in the lined baking dish.
5.
Spread topping over filet of fish.
6.
Cover the dish with foil.
7.
Place into oven and bake covered for 20 mins.
8.
Uncover and bake an additional 10-15 min. longer until the internal temperature of the fish reaches 140° F (or until golden brown).
9.
Remove and let cool for 5 mins before serving.

Substitute Lemon Dill Dip mix for the dill, salt, and black pepper ingredients above… my favorite!

Serve over white, brown, or wild rice
13.
Sprinkle paprika on top prior to baking
