Lisa Radigonda's Deluxe Lemon Bars

Although these aren’t an Italian dessert, everyone always asked my grandmother to make them—everyone loved them. And when I think of my grandmother, I think of her gravy, pillowy soft gnocchi, sadly I don’t have the recipe for either, and these lemon bars.

Ingredients
For the crust:

cup all-purpose flour

cup sugar
1
cup cold butter
For the filling:

eggs

cup all-purpose flour
1
cup sugar
1/2
tsp baking powder
1/2
tsp lemon zest
1/4
cup lemon juice
1/2
cup powdered sugar for dusting
Directions

Preheat oven to 350º

To make the crust:

Sift the flour and sugar into a bowl

Cut in the butter until the texture is like coarse crumbs
5.
Press into a 13 x 9 x 2” baking dish

Bake for 20 – 25 minutes or until light brown

To make the filling:

Beat together eggs, sugar, lemon zest and lemon juice
9.
Mix flour and baking powder together in a separate bowl then stir into egg mixture

Pour over baked crust

Bake for 25 minutes

Remove and sprinkle with powdered sugar, cool then cut into bars
