Lisa Radigonda's Anise Cookies

Sunday dinner at my Italian grandmother’s house meant food drying out on boards, usually homemade pasta, in the dining from the morning prep. Every so often, I’d spy these cookies, so I knew what was for dessert. By laying them out overnight, the outside gets crisp when baking while the inside stays chewy. Next to her chocolate chip cookies, these always remind me of her and the flavors of Italy.

Ingredients
2
eggs, cold
1
cup sugar
3/4
tsp anise extract
1
cup all-purpose flour
Directions
1.
Beat eggs and sugar for 4 – 6 minutes or until thick
2.
Mix in anise
3.
Beat in flour until well incorporated
4.
Drop rounded teaspoons onto greased cookie sheets
5.
Let stand overnight, at least 12 hours
6.
Preheat oven to 350º
7.
Bake for 10 – 12 minutes or until bottom and/or edges are golden brown
