Butterscotch Creme Brulee

Ingredients

tbsp butter
1/2
cup brown sugar
2
cups heavy cream
1
tbsp vanilla extract
5
large egg yolks
4-8
tbsp sugar (for caramelizing)
Directions
1.
Preheat oven to 325.
2.
Melt butter in a medium saucepan.
3.
Add brown sugar in small amounts, waiting for previously added sugar to nearly melt.
4.
When all sugar has been added, mixture will become thick and sugar will not longer melt.
5.
Immediately add heavy whipping cream.
6.
Heat until warm, but not boiling, then remove from heat.
7.
Add vanilla and set aside for 15 minutes.
8.
Add 1/2 C. of mixture to egg yolks and mix in an electric blender.
9.
Gradually add remaining mixture.
10.
Place ramekins in an oven safe dish.
11.
Pour creme brulee mixture into ramekins.
12.
Fill oven safe dish with warm water until it comes halfway up the sides of the ramekins.
13.
Place in oven and bake until creme brulee is set (about 40 minutes).
14.
Remove ramekins from dish and let sit for about 30 minutes, then place ramekins in the fridge for about 3-4 hours.
15.
Remove from fridge and cover surface of creme brulee with 1-2 T. sugar.
16.
Use a blow torch to caramelize sugar.
