Connie Jones' No Bake Carob And Peanut Butter Drops

My wonderful and delightful mother-in-law Connie Jones makes the best snacks and treats for any and all people around her. Among my favorites are her ‘carob drops’ which you can always find in her fridge/freezer. They are the perfect, chocolatey, any-time snack Fun Fact: Carob powder is a cocoa powder alternative. It’s made from dried, roasted carob tree pods and looks a lot like cocoa powder. Carob powder is often used as a natural sweetener in baked goods. It’s sweet and has a unique taste.

Ingredients
2
cups sugar (or sugar substitute, Stevia works well)
2/3
cup butter
1/2
cup carob powder
1/2
cup canned evaporated milk
1/2
cup carob chips
1/2
cup peanut butter
1
tsp vanilla
3
cup uncooked quick 1-minute oats
2
cups white chocolate chips (add at the very end)
Directions
1.
Combine first four ingredients in medium saucepan, bring to a simmer stirring frequently. Cook until sugar dissolves (about 2 minutes).

Remove from heat and add carob chips and let stand for one minute. Stir with whisk until chips are melted.
3.
Add peanut butter and vanilla and mix well
4.
Stir in oats and mix well
5.
Stir in white chocolate chips and mix well
6.
Drop by large spoonful on waxed paper-lined cookie sheet.
7.
Cool for at least 15 minutes.

Keep refrigerated and enjoy!
9.
Note these freeze really well and can be eaten directly from the freezer!
