Spicy Coconut Cauliflower Soup

I like to have a short list of vegan and vegetarian go to recipes. This recipe is quick and easy with simple ingredients. Anyone can make it their own by using a spice or two that they love!

Ingredients
3
cups of Cauliflower
1/2
cup of Coconut milk
1
tbsp spoon Vegan soup base
Jalapeños (habaneros if you dare)
1/2
cup of Carrots
2
tbsp spoons of Cilantro
2
tbsp Spoons of Olive Oil
3
cups of water
Salt and pepper to taste
Directions
1.
Sautee cauliflower, carrots and jalapeños in a pot for 4 mins
2.
Stir in vegan soup base of choice with half of the water.
3.
Cook for 3 mins then add coconut milk and salt and pepper to taste.
4.
Gradually add remaining water until you get your desired amount of broth.
5.
Finish cooking until veggies are tender.
6.
Ladle in bowl and garnish with cilantro
