Andrea Hall's Garden Tacos

These garden tacos don’t skimp on the flavor! If you enjoy eating meatless but miss the added substance and flavor, these tacos really hit the spot. The soyizo kicks up the flavor and spice to a new level!

Ingredients
1
large Potato
4
cups of Cauliflower Florets
1
cup of soyizo
1/2
cup of diced onions
2
tbsp spoons olive oil
Salt and pepper to taste
Toppings: Avocado, cilantro, salsa, cheese and pickled onions
Directions
1.
Slice potato on the long in about 1-inch pieces – should be thick and French fry like
2.
Add olive oil and potatoes to pan and cook on medium heat until almost tender (will vary based on potato thickness
3.
Once almost tender add cauliflower, salt and pepper to taste and cook until vegetables are tender
4.
Once tender add soyizo and turn to low, cook until soyizo has a bit of a crisp like texture
5.
Fill taco shells or on top of a bed of lettuce and add your favorite toppings
